So, while tipsy tonight, I have just stuffed into the oven a shepherd's pie made of 80/20 beef seasoned with garlic salt and worcestershire, mixed with garlic and onion braised in sharp red wine with black and white pepper, and various mixed veggies, layered with sharp and white cheddar, then topped with Fauxtatoes made with cauliflower steamed and whipped with Philadelphia Italian Cooking Creme and sour cream along with black pepper and paprika, topped with parmesan.
Because it was what we had in the fridge and pantry.
And then I think back to a year ago when I would burn water by looking at it crosseyed. And now. And then.
Well, if nothing else, that's SOMETHING I accomplished in 2011? Time to do a dance of smug!
