I has a smug

So after hanging out with a few people at CCSD we hadn't seen since the last one, and noticing they had lost an ENORMOUS amount of healthy weight, we inquired into it and found out they'd been going the Atkins/South Beach route, while still staying as low-fat as possible.

After a bit of discussion, we decided to give it a try.

I'm discovering that between my internet search skills and my natural experimenism in the kitchen, I am coming up with some incredibly delicious things. J. was uncertain if he wanted to try this route until last night, when I served up a low-carb baked chicken cordon bleu in Bearnaise with steamed asparagus. He declared himself sold.

Today I A. picked up a pack of TGIFriday's frozen original hot wings, which are insanely low carb as they skip the breading (which I learned in 2003), and am currently cooking a low-carb stuffed meatloaf with steamed spinach in vinegar and butter.

I THINK we might be able to stick with this. Mainly because one of the first things I found was a good way to fake mac n cheese, for when the psychotic carb urges hit me in a few days.

But for now, I'm having fun flexing my creative cooking muscles.
